Lazy-simple governor's chicken

Governor's chicken 

Ingredients:
Chicken breast 
Some grounded fresh Pepper
One egg 
1 cup of corn starch(depends how much chicken breast you use) 
Vegetable oil
Governor's chicken sauce

Directions:
Cut the chicken into whatever shapes you would prefer, I cut it into wide strips, you know it's called LAZY governor's chicken, you can do whatever you think it's the easiest way. 

Then seasoned with pepper and mix well with one beated egg. Let it sit for 10 mins. 

Get a large bowl, put cornstarch into it. Then add seasoned chicken into it, mix well, shake off the excess cornstarch before you fry them. 


The first time looks like this. And you gotta fry twice. And it will looks nice golden brown. 


Now, get another pan, pull the sauce into it. I add some vinegar(it's oppotional).




Stir well the chicken& sauce. 


When all the chicken coated with sauce, it's time to garnish.


Oh well, I don't know why, but I sprinkled some sesame seeds on it. Now it looks like sesame chicken.  But who care, lol, I like it, my husband loves it! And it's supper simple.You can garnish with boiled broccoli or some green onions. It's perfect for people who wants to make a good dinner, but feeling lazy at the same time. Besides this, I also made sautéed Napa cabbages, served with rice. I would say it took me around 45 mins and I've got  everything done. :)

Roasted Honey&garlic chicken thighs with potatoes (双汁酱烤鸡腿土豆)

Roasted Honey&garlic chicken thighs with potatoes (双汁酱烤鸡腿土豆)


Ingredients:
  • 2 chicken thighs
  • 2 large potatoes
  • 1 tbsp dark soy sauce
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 8 gloves garlic chopped
  • 1/4 cup of honey
  • Olive oil
  • 1 tbsp garlic powder
  • 1 tbsp salt for chicken another 1 tbsp for potatoes
  • 1 tsp pepper for chicken another 1 tbsp for potatoes
  • 2 tbsp paprika pepper powder
  • 2 tbsp cumin for potatoes (optional) 
Direction:

Cut the potatoes into cubes, seasoned with salt&pepper,garlic powder, paprika pepper and cumin, add 3-4 tbsp of olive oil stir well and pull into a baking pan, you don't want your potatoes too dry after done. Now season the chicken thighs, get a bowl, add dark soy sauce, soy sauce, sugar, fine chopped garlic, salt&pepper and half honey, mix them well, and give your chicken thighs a good massage with those sauce. Don't forget put some under the skin. (It's better let them sit for 2 hours before you cook.) Pull the rest sauce into the potatoes. 

Now preheat the oven 425 F, bake for 45 mins-1 hour (or even longer, depends how big the chicken thighs are), brush on some honey after baked 30 mins to make the chicken skin and put it back to oven until done.   


Dry-fried potatoes (干煸土豆丝)

Dry-fried potatoes(干煸土豆丝)


Ingredients: 
  • 2 large potatoes
  • 5 dried red chili pepper
  • few Sichuan peppercorns
  • 1 green onions chopped
  • 1 tbsp fine chopped ginger
  • 2  fine chopped garlic
  • 3 tbsp cumin powder 
  • 1 tsp salt
  • 1/2 cup of corn starch
  • Vegetable oil
Direction:

I left potato skin on, but if you want to peel the skin it fine too. Cut the potato into 4mm-5mm strips, soak into the water for 5 mins, then rinse them couple times and drain the potatoes.  Meanwhile, pull the oil into the pot, then coated potatoes with corn starch evenly. Deep fry until golden and crispy. Or fry twice (that's the ancient secret, it makes potato fries extra crispy).

Add some oil into a pan, low heat, when the oil just start warm, add dried red chili pepper, peppercorn, ginger and garlic, stir well, don't let them burned. When you smell the garlic and chili pull over the potato fries. Quick stir fry evenly for 2-3 mins, then add salt and cumin powder, sprinkle the green onion. Stir evenly another 1 min, now it's ready to serve. :) Enjoy!!!
